                GREEN TEA

Green Tea is the most popular tea in China. It is produced from Camellia sinensis, the same plant that is used to produce the traditional black tea. The major difference between the two kinds of tea is the oxidation process, while black tea is almost completely oxidized; green tea is only minimally oxidized.

Green tea contains caffeine and caffeine-like substances (theophylline and theobromine). Although green tea leaves contain more caffeine than dry coffee, a cup of green tea infusion contains less caffeine than a cup of coffee. Caffeine content in the beverage decreases if the leaves are brewed more than once. Due to its caffeine content, drinking green tea before sleeping should be avoided.

Green tea brewing depends on the quality of the tea. Higher quality teas require less steeping time and cooler water temperature while lower quality leaves require a long steeping time and hotter water. Brewing green tea in very hot water or for too long may result in a bitter, astringent beverage.

Green tea contains more anti-oxidants than black tea; it also contains minerals and vitamins. Several studies demonstrated the health benefits of green tea which include protection from cardiovascular disease and cancer, increasing bone density and improving metabolism to encourage weight loss and prevent diabetes.

Although green tea is produced in several countries, China produces the finest green teas. There are hundreds of different green tea varieties produced in almost all Chinese provinces. The most famous and finest Chinese tea is Xi Hu Longjing (West Lake Dragonwell); it is produced in Hangzhou, Zhejiang Province. This tea has been produced for more than a thousand years of recorded history and was mentioned by Lu Yu in the first ever tea book (Cha Ching). It has a light fruity taste and a sweet aftertaste. For hundreds of years, Longjing tea has been used in Chinese traditional to treat all kinds of diseases and infections.

          THE JAPANESE TEA TRADITION

Green tea is by far the most popular among tea varieties in Japan. It has been an essential element in Japanese tradition since it was brought into Japan by a Buddhist priest from China hundreds of years ago. Green tea is almost always served for special guests and special occasions in the Japanese society. Tea is also consumed during tea breaks at work and with or after meals. In fact, most Japanese restaurants serve a cup of tea at no extra charge to demonstrate hospitality as well as their commitment to the Japanese tradition.


Numerous varieties of green tea are produced in Japan. Gyokuro (Jade Dew) is the highest grade Japanese tea due to its special plantation and high quality processing. Most of the tea produced in Japan however, is of the Sencha (roasted tea) variety which is the most popular green tea in Japan. Another famous Japanese tea is Matcha tea which is made from ground Gyokuro tea. Matcha tea is what is usually used in the "Japanese Tea Ceremony". This traditional ceremony was mainly developed by Zen Buddhism; it has been practiced for centuries and is still taught and practiced until the present time.  Matcha tea is ground fine and therefore, the powder is consumed with the infusion thus maximizing the health benefits of green tea. Matchawan, which are special bowls without handles are used to serve Matcha tea in the tea ceremony.


Other varieties of tea are also available in Japan although less popular than green tea. Oolong tea is quite popular and Black tea is also served in Japanese coffee shops and restaurants, often with milk or lemon. Tisanes are also popular in Japan, especially barley tea (mugi-cha) which is often consumed cold in the summer. Other popular tisanes are buckwheat tea (soba-cha) and hydrangea tea (ama-cha).
